I wanted to put together a pet box for Bear and his brother Miso for Christmas. Similar to Bark Box where there are treats, toys and other goodies. Did a play on that by adding a personal touch with homemade Pumpkin Peanut Butter Biscuits. Usually we buy treats but wanted try something homemade for our furry pets. Had a few treats pinned and decided to go with a recipe from Created by Diane with some slight modifications. Was lucky enough to have all the ingredients except for the pumpkin puree.
INGREDIENTS:
- 3 cups oats
- ½ cup peanut butter
- 1 cup pumpkin puree
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 2 eggs
DIRECTIONS:
Step 1: Place the oatmeal into a food processor and pulse it until it's not so coarse, but it doesn't need to be a fine as flour.
Step 2: Add oatmeal, pumpkin, peanut butter cinnamon baking powder and eggs to bowl on mixer and blend on medium until it's all mixed.
Step 3: Roll out with a little flour.
***Note: This is where I modified the step a little bit. I started out with the rolling pin but found the dough really really sticky even with the flour. Instead, I covered both hands with some flour and patted out flat enough where the cookie cutter can cut it.
Step 4: Cut with cookie cutters.
Step 5: Bake at 375 degrees for 15-20 minutes and cool on rack until completely cooled.
Step 6: Place in airtight container to keep them fresh, or in the freezer. I keep them in the freezer, they don't freeze solid as there is little liquid.
